Whisk Batter & Rest for 5 Minutes
- In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, pumpkin pie spice, ground cinnamon, and kosher salt.
- In a medium bowl, whisk the pumpkin puree, room-temperature buttermilk, eggs, dark brown sugar, melted butter, and vanilla extract until smooth and vibrant orange.
- Pour the wet mixture into the dry ingredients and fold gently with a silicone spatula just until combined—a few small lumps are essential for fluffy pancakes! Let the batter rest for 5 minutes while preheating your griddle to medium-low heat (325°F).
Cook on a Buttered Griddle & Serve Warm
- Brush the warm griddle lightly with melted butter. Scoop 1/3-cup portions of batter onto the griddle, using the back of the scoop to gently spread each into a 4-inch round.
- Cook over medium-low heat for 3 minutes until bubbles form around the edges and the bottoms are golden brown. Flip carefully and cook for 2–3 minutes more until puffed and cooked through the center. Serve stacked high with butter, toasted pecans, and warm maple syrup.
