25-Minute Creamy Lemon Herb Chicken

Ingredients
  

  • 2 large boneless skinless chicken breasts pounded to an even thickness
  • 1 tbsp olive oil for searing
  • 3 cloves garlic minced
  • 1/2 cup chicken broth for deglazing
  • 1/2 cup heavy cream room temperature
  • 1 large fresh lemon juiced and zested
  • 1 tbsp fresh thyme chopped
  • 1 tbsp fresh rosemary chopped
  • 1 pinch salt and pepper to taste

Method
 

  1. Season your chicken generously. Heat olive oil in a cast-iron skillet and sear the chicken until golden brown and cooked through. Transfer to a plate.
  2. Lower the heat, add minced garlic, and sauté until fragrant. Pour in the chicken broth, scraping the bottom of the pan to release the flavorful fond.
  3. Whisk in the heavy cream, fresh lemon juice, zest, thyme, and rosemary. Let it simmer gently for a few minutes until it thickens slightly.
  4. Return the chicken and any resting juices back to the skillet. Spoon the rich lemon herb sauce over the chicken and garnish with extra lemon slices.
