Ingredients

Savory Turkey & Sweet Potato Skillet Base
  • 1.5 tbsp olive oil or avocado oil
  • 1 lb lean ground turkey (93/7)
  • 1 large orange sweet potato peeled and diced into small 1/2-inch cubes (about 2 1/2 cups)
  • 1 small yellow onion finely diced
  • 1 medium red bell pepper diced
  • 3 cloves garlic minced
  • 1 can (15 oz) black beans rinsed and drained
  • 3/4 cup sweet yellow corn kernels
  • 1/2 cup low-sodium chicken broth or salsa
Homemade Taco Spice Blend & Melted Cheese Topping
  • 2 tsp chili powder
  • 1 1/2 tsp ground cumin
  • 1 tsp smoked paprika & garlic powder
  • 3/4 tsp kosher salt & freshly cracked black pepper
  • 1 cup shredded sharp Cheddar and Monterey Jack cheese blend
  • 1 medium ripe avocado diced, plus fresh cilantro and lime wedges for serving

Equipment

  • 12-Inch Cast-Iron or Nonstick Skillet with Lid
  • Chef's Knife & Cutting Board

Method

Brown the Ground Turkey & Aromatics
  1. Heat the olive oil in a large 12-inch skillet over medium-high heat. Add the lean ground turkey, diced onion, and red bell pepper, breaking up the meat with a wooden spoon as it cooks for 5–6 minutes until browned.
  2. Add the minced garlic, chili powder, ground cumin, smoked paprika, garlic powder, salt, and pepper. Stir for 60 seconds until the spices coat the meat and smell deeply fragrant.
Steam-Roast the Sweet Potatoes & Melt Cheese
  1. Stir in the 1/2-inch cubed sweet potatoes and 1/2 cup chicken broth. Reduce heat to medium, cover tightly with a lid, and cook for 9–11 minutes (stirring once halfway through) until the sweet potatoes are fork-tender.
  2. Uncover and fold in the drained black beans and sweet corn, cooking for 2 minutes until warmed through and any excess liquid evaporates.
  3. Sprinkle the shredded Cheddar and Monterey Jack cheese evenly over the skillet. Cover with the lid off the heat for 2 minutes until bubbly and melted. Top with diced avocado, fresh cilantro, and a squeeze of lime juice.
