Ingredients

Savory Southwest Chicken & Bean Base
  • 1 tbsp olive oil
  • 1 medium yellow onion finely diced
  • 4 cloves garlic minced
  • 3 cups cooked shredded chicken breast or rotisserie chicken
  • 2 cans (15 oz each) white cannellini or Great Northern beans drained and rinsed
  • 2 cans (4 oz each) diced mild green chiles undrained
  • 1 cup sweet yellow corn kernels fresh, frozen, or drained canned
  • 3 cups low-sodium chicken broth
  • 2 tsp ground cumin
  • 1 tsp dried oregano
  • 1/2 tsp smoked paprika & kosher salt
Velvety Cream Cheese & Monterey Jack Finish
  • 4 oz full-fat block cream cheese cubed and softened at room temperature
  • 1 cup freshly shredded Monterey Jack or Pepper Jack cheese
  • 1 tbsp fresh lime juice
  • 1/4 cup fresh chopped cilantro plus avocado & tortilla strips for serving

Equipment

  • Large Dutch Oven or Soup Pot
  • Potato Masher or Immersion Blender

Method

Sauté Aromatics & Simmer the Chili Base
  1. Heat the olive oil in a large Dutch oven over medium heat. Add the diced onion and sauté for 4 minutes until translucent. Add the minced garlic, ground cumin, oregano, and smoked paprika, stirring for 60 seconds until fragrant.
  2. Pour in the chicken broth, drained white beans, undrained diced green chiles, and sweet corn. Use a potato masher to lightly mash about 1/4 of the beans right in the pot to naturally thicken the broth.
  3. Stir in the shredded chicken, bring to a gentle simmer, and cook uncovered for 10 minutes so the flavors meld.
Melt the Cream Cheese & Serve
  1. Reduce the burner heat to low. Add the softened cream cheese cubes and freshly shredded Monterey Jack cheese, stirring continuously for 3–4 minutes until melted into a velvety, spoon-coating broth.
  2. Remove from heat and stir in the fresh lime juice and chopped cilantro. Ladle into warm bowls and top with crispy tortilla strips, diced avocado, and jalapeño slices.
