Ingredients

Stovetop Caramelized Spiced Apple Filling
  • 5 medium Honeycrisp and Granny Smith apples peeled, cored, and sliced 1/4-inch thick (about 5 cups)
  • 2 tbsp unsalted butter
  • 1/3 cup packed dark brown sugar
  • 3 tbsp fresh apple cider or lemon juice
  • 1 1/2 tsp ground cinnamon
  • 1 tbsp cornstarch
  • 1 tsp pure vanilla extract
Clumpy Brown Butter Oat & Pecan Streusel
  • 6 tbsp unsalted butter browned in a small pan until nutty and golden
  • 3/4 cup old-fashioned rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 cup packed dark brown sugar
  • 1/2 cup chopped pecans
  • 1/2 tsp ground cinnamon & flaky sea salt
  • 1/3 cup warm salted caramel sauce & vanilla bean ice cream for serving

Equipment

  • 10-Inch Cast-Iron Skillet
  • Mixing Bowl & Silicone Spatula

Method

Mix the Brown Butter Oat Streusel
  1. Preheat your oven to 400°F (200°C). In a medium bowl, stir together the old-fashioned rolled oats, flour, dark brown sugar, chopped pecans, cinnamon, and salt.
  2. Pour the warm browned butter over the dry oat mixture and toss with a fork until large, buttery streusel clumps form. Set aside.
Simmer Apples in Skillet & Bake Crisp
  1. Melt 2 tablespoons butter in a 10-inch cast-iron skillet over medium-high heat. Add the sliced apples, dark brown sugar, cinnamon, apple cider, cornstarch, and vanilla. Sauté for 5 minutes until the apples are slightly tender and coated in a glossy bubbling caramel.
  2. Remove the skillet from the burner and scatter the clumpy brown butter oat streusel evenly over the hot apples.
  3. Transfer the skillet to the 400°F oven and bake for 15 minutes until the oat topping is deeply golden-crisp and the apple caramel is bubbling up around the edges. Cool for 5 minutes, then top with vanilla ice cream and salted caramel drizzle.
