  • 4 medium beetroots peeled and cut into wedges
  • 100 g feta cheese crumbled
  • 50 g walnuts chopped
  • 100 g arugula or mixed greens
  • 3 tablespoons olive oil for dressing
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey optional
  • to taste salt
  • to taste pepper

Method
 

Prepare the Beetroots
  1. Preheat the oven to 200°C (400°F). Place the beetroot wedges on a baking tray, drizzle with olive oil, and season with salt and pepper. Roast for 30 minutes or until tender.
Assemble the Salad
  1. In a large mixing bowl, combine the arugula, roasted beetroot, crumbled feta, and chopped walnuts.
  2. In a small bowl, whisk together the olive oil, balsamic vinegar, honey (if using), salt, and pepper. Drizzle over the salad and toss gently to combine.
