Ingredients
  

Crust
  • 1 cup graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter melted
Filling
  • 8 oz cream cheese softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy cream whipped
Topping
  • 2 cups fresh blueberries
  • 2 tbsp granulated sugar for macerating blueberries

Method
 

Prepare the crust
  1. In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined.
  2. Press the mixture firmly into the bottom of a 9-inch pie dish to form the crust.
Make the filling
  1. In another bowl, beat the softened cream cheese with an electric mixer until smooth.
  2. Add powdered sugar and vanilla extract, and mix until well combined.
  3. Gently fold in the whipped heavy cream until fully incorporated.
Assemble the dessert
  1. Spread the cream cheese filling evenly over the prepared crust.
  2. In a separate bowl, toss the fresh blueberries with granulated sugar and let sit for 10 minutes to release juices.
  3. Top the cream cheese filling with the macerated blueberries.
Chill and serve
  1. Refrigerate the dessert for at least 2 hours before serving to allow it to set.
  2. Slice and serve chilled, garnished with additional blueberries if desired.
