Ingredients
  

Main Ingredients
  • 1 lb Ground Beef or turkey
  • 2 cups Bell Peppers diced
  • 1 cup Onion chopped
  • 2 cups Cooked Rice or quinoa
  • 1 can Black Beans drained and rinsed
  • 1 cup Corn frozen or canned
  • 1 cup Shredded Cheese cheddar or your choice
  • 1 packet Taco Seasoning
Snacks
  • 2 cups Trail Mix mixed nuts, dried fruits, and chocolate
  • 1 box Granola Bars

Method
 

Prepare the Main Dish
  1. In a large skillet, brown the ground beef over medium heat until fully cooked. Drain excess fat.
  2. Add the diced bell peppers and chopped onion to the skillet. Cook until softened, about 5-7 minutes.
  3. Stir in the cooked rice, black beans, corn, and taco seasoning. Mix well and cook for another 5 minutes.
  4. Remove from heat and stir in the shredded cheese until melted.
  5. Allow the mixture to cool, then pack it into storage containers for your camping trip.
Prepare Snacks
  1. Combine trail mix ingredients in a bowl and mix well. Store in an airtight container.
  2. Pack granola bars in a separate container for easy access.
