Ingredients
  

Crust
  • 1.5 cups Graham cracker crumbs
  • 0.25 cups Granulated sugar
  • 0.5 cups Unsalted butter melted
Filling
  • 16 oz Cream cheese softened
  • 0.75 cups Granulated sugar adjust to taste
  • 0.5 cups Sour cream
  • 1 tsp Vanilla extract preferably pure
  • 3 large Eggs room temperature
  • 2 cups Fresh or canned cherries if using canned, drain well
  • 1 tbsp Cornstarch
  • 1 tbsp Lemon juice

Method
 

Preparation
  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs, 0.25 cups granulated sugar, and melted unsalted butter until combined. Press mixture into the bottom of a 9-inch springform pan.
  3. In a large mixing bowl, beat the softened cream cheese and 0.75 cups granulated sugar until smooth and creamy.
  4. Add sour cream, vanilla extract, and eggs one at a time, mixing well after each addition.
  5. Gently fold in the fresh or canned cherries, cornstarch, and lemon juice.
  6. Pour the cream cheese mixture over the crust in the springform pan.
  7. Bake for 60 minutes, or until the center is set and edges are lightly browned.
  8. Remove from the oven and let it cool. Refrigerate for at least 4 hours before serving.
