Ingredients
  

Filling
  • 4 cups fresh cherries, pitted
  • 1 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
Topping
  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar packed
  • 1/2 cup unsalted butter melted
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Method
 

Prepare the Filling
  1. Preheat the oven to 350°F (175°C). In a mixing bowl, combine the pitted cherries, granulated sugar, cornstarch, vanilla extract, and lemon juice. Mix well and set aside.
Prepare the Topping
  1. In another bowl, mix together the rolled oats, flour, brown sugar, melted butter, cinnamon, and salt until crumbly.
Assemble and Bake
  1. Pour the cherry mixture into a 9-inch baking dish. Evenly spread the oat topping over the cherries. Bake in the preheated oven for 30 minutes or until the topping is golden brown and the cherries are bubbly.
Serve
  1. Let the cherry crisp cool for a few minutes before serving. Enjoy warm, optionally with vanilla ice cream.

Notes

For best results, use fresh cherries. You can substitute with frozen cherries, but thaw and drain excess liquid before using.
