Ingredients
  

Chicken
  • 4 pieces chicken thighs (bone-in, skin-on)
  • 1 cup buttermilk (for marinating)
  • 1 cup all-purpose flour (for coating)
  • 1 tablespoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 cups vegetable oil (for frying)
Waffle Batter
  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 2 large eggs
  • 1.5 cups milk
  • 1/2 cup unsalted butter (melted)
  • 1 teaspoon vanilla extract
  • 1/2 cup maple syrup
  • 1 cup fresh fruit (optional, such as berries)

Method
 

Chicken Preparation
  1. Marinate chicken thighs in buttermilk for at least 1 hour or overnight in the refrigerator.
  2. In a bowl, combine 1 cup of flour, paprika, garlic powder, onion powder, salt, and black pepper.
  3. Remove chicken from buttermilk, coat with the flour mixture.
  4. Heat vegetable oil in a large skillet over medium-high heat.
  5. Fry chicken thighs until golden brown and cooked through, about 15-20 minutes per side. Remove and drain on paper towels.
Waffle Preparation
  1. In another bowl, mix 2 cups of flour, sugar, baking powder, and salt.
  2. In a separate bowl, whisk together eggs, milk, melted butter, and vanilla extract.
  3. Combine wet and dry ingredients and stir until just combined.
  4. Pour batter onto a preheated waffle maker and cook according to manufacturer's instructions.
Serving
  1. Serve fried chicken on top of waffles and drizzle with maple syrup. Optionally, top with fresh fruit.
