Ingredients
  

Pasta and Chicken
  • 8 ounces penne pasta or any pasta of choice
  • 2 cups cooked chicken breast shredded or diced
Salad Base
  • 4 cups romaine lettuce chopped
  • 1 cup cherry tomatoes halved
  • 1/2 cup Parmesan cheese grated
Dressing
  • 1/2 cup Caesar dressing store-bought or homemade
  • 1 tablespoon lemon juice freshly squeezed
Garnish
  • 1/4 cup croutons optional
  • 2 tablespoons fresh parsley chopped, optional

Method
 

Prepare the Pasta
  1. Cook the penne pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
Combine Ingredients
  1. In a large mixing bowl, combine the cooked pasta, shredded chicken, chopped romaine lettuce, halved cherry tomatoes, and grated Parmesan cheese.
Make the Dressing
  1. In a small bowl, whisk together the Caesar dressing and lemon juice until well combined.
Toss and Serve
  1. Pour the dressing over the pasta salad and toss gently to combine. Garnish with croutons and chopped parsley if desired.
  2. Serve immediately or refrigerate for 30 minutes to allow flavors to meld.
