Ingredients
  

Cilantro-Lime Rice
  • 1 cup white rice uncooked
  • 2 cups water
  • 1 tablespoon olive oil
  • 1 lime juice freshly squeezed
  • 1/4 cup cilantro chopped
  • 1/2 teaspoon salt
Protein
  • 1 pound chicken breast or steak
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Toppings
  • 1 cup black beans canned, drained
  • 1 cup corn canned or frozen
  • 1 cup salsa your choice
  • 1 cup shredded cheese cheddar or Monterey Jack
  • 1 avocado sliced
  • 1/2 cup sour cream

Method
 

Prepare the Rice
  1. In a large pot, combine the rice, water, and olive oil. Bring to a boil, then cover and reduce to a simmer for 18-20 minutes until the rice is cooked.
  2. Remove from heat, fluff with a fork, and stir in lime juice, cilantro, and salt. Set aside.
Cook the Protein
  1. In a skillet, heat olive oil over medium heat. Season the chicken (or steak) with chili powder, cumin, garlic powder, salt, and black pepper.
  2. Cook for 6-7 minutes on each side until fully cooked. Remove from heat and let rest for a few minutes before slicing.
Assemble the Bowl
  1. In a bowl, layer the cilantro-lime rice, followed by the sliced protein, black beans, corn, salsa, cheese, avocado, and sour cream.
  2. Serve immediately and enjoy your homemade Chipotle bowl!
