Creamy Tropical Mango Smoothie Bowl

Ingredients
  

  • 1 1/2 cups frozen mango chunks
  • 1/2 cup frozen pineapple chunks
  • 1/2 large banana fresh or frozen
  • 1/3 cup coconut milk full fat canned, or almond milk (plus more if needed to blend)
  • 1 tbsp honey or maple syrup optional, depending on fruit sweetness
  • 1 kiwi peeled and thinly sliced
  • 1 tbsp chia seeds
  • 2 tbsp unsweetened coconut flakes toasted
  • 1/4 cup granola

Method
 

  1. Add the frozen mango chunks, frozen pineapple, and banana to the pitcher of a high-speed blender.
  2. Pour the coconut milk over the fruit. If you want a little extra sweetness, add the honey now.
  3. Blend on low speed, using the tamper tool to push the fruit down into the blades. It will take some patience! Increase speed slowly until a thick, creamy, ice-cream-like consistency forms. Only add more liquid 1 tablespoon at a time if absolutely necessary (too much liquid makes a regular smoothie, not a bowl).
  4. Scoop the thick smoothie mixture out of the blender and into a shallow serving bowl.
  5. Immediately arrange your toppings in neat rows across the top: sliced kiwi, chia seeds, coconut flakes, and crunchy granola.
  6. Enjoy immediately with a spoon before it melts!
