Preheat your air fryer to 375°F (190°C) for 3 minutes.
In a shallow bowl, whisk the egg. In a separate shallow bowl, combine the panko breadcrumbs, grated parmesan cheese, garlic powder, Italian seasoning, salt, and black pepper.
Dip each chicken breast into the beaten egg, letting any excess drip off, then press it firmly into the parmesan breadcrumb mixture until completely coated on all sides.
Lightly spray the air fryer basket with olive oil spray. Place the breaded chicken breasts into the basket in a single layer (do not overlap). Generously spray the tops of the chicken with olive oil spray (this is the secret to a golden crust).
Air fry at 375°F for 6 minutes. Carefully flip the chicken, spray the other side lightly with oil, and air fry for another 5-7 minutes, or until the chicken reaches an internal temperature of 165°F and the crust is deep golden brown and crispy.
Let the chicken rest for 3 minutes before slicing to lock in the juices. Garnish with fresh parsley and serve!
