Ingredients
  

Pasta
  • 8 oz pasta (fusilli or rotini) cooked and cooled
Vegetables
  • 1 cup cucumber diced
  • 1 cup cherry tomatoes halved
  • 1/2 cup red onion finely chopped
  • 1/4 cup bell pepper diced
Dressing
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dijon mustard
  • 1 clove garlic minced
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste
Herbs
  • 1/4 cup fresh parsley chopped

Method
 

Prepare the Pasta
  1. Cook the pasta according to package instructions. Drain and let cool.
Mix the Vegetables
  1. In a large mixing bowl, combine the diced cucumber, halved cherry tomatoes, chopped red onion, and diced bell pepper.
Make the Dressing
  1. In a small bowl, whisk together the olive oil, red wine vinegar, dijon mustard, minced garlic, salt, and black pepper.
Combine
  1. Add the cooled pasta and dressing to the vegetable mixture. Toss to combine.
Serve
  1. Garnish with chopped parsley and serve chilled or at room temperature.
