Cucumber Sandwiches

Ingredients
  

Sandwich Filling
  • 1 cup cream cheese softened
  • 1 tablespoon fresh dill chopped
  • 1 teaspoon lemon juice
  • 1 large cucumber thinly sliced
  • 8 slices white bread crusts removed

Method
 

Prepare the Filling
  1. In a mixing bowl, combine softened cream cheese, chopped dill, and lemon juice. Mix until smooth.
Assemble the Sandwiches
  1. Spread a layer of the cream cheese mixture onto one side of each slice of bread.
  2. Layer the thin cucumber slices on top of the cream cheese on half of the slices.
  3. Top with the remaining slices of bread, cream cheese side down, to form sandwiches.
Cut and Serve
  1. Cut each sandwich into quarters or triangles and arrange on a platter.
  2. Serve immediately or refrigerate until ready to serve.

Notes

These sandwiches are best served fresh but can be made a few hours in advance. Keep them covered in the refrigerator to prevent drying out.
