  • 1 large daikon radish peeled and julienned
  • 1 medium carrot peeled and julienned
  • 1 cup cucumber thinly sliced
  • 2 tablespoons fresh cilantro chopped
  • 1 tablespoon sesame seeds toasted
Dressing Ingredients
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon honey or maple syrup for vegan option
  • 1 clove garlic minced

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the julienned daikon radish, carrot, cucumber, and chopped cilantro.
  2. In a separate small bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey, and minced garlic to make the dressing.
  3. Pour the dressing over the salad ingredients and toss well to combine.
  4. Sprinkle toasted sesame seeds on top before serving.
