Method

  2. In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until fluffy.
  3. Beat in the eggs one at a time, followed by the vanilla extract.
  4. In another bowl, whisk together the flour and baking soda; gradually mix into the wet ingredients until just combined.
  5. Gently fold in the chopped Cadbury Mini Eggs.
  6. Drop dough onto prepared baking sheets about two inches apart and bake for 10-12 minutes or until golden around the edges but still soft in the center.
  7. Allow cookies to cool slightly on wire racks before serving.
