Ingredients
  

  • 1 lb lean ground beef
  • 1 cup long-grain white rice
  • 1 cup bell peppers, diced any color
  • 1 packet taco seasoning about 1 oz
  • 1 can black beans 15 oz, rinsed and drained
  • 1 cup corn fresh or frozen
  • 1 cup shredded sharp cheddar cheese
  • ½ cup water for cooking

Method
 

  1. In a large skillet over medium heat, brown the ground beef for 5-7 minutes until fully cooked. Drain excess fat if needed.
  2. Add diced bell peppers and cook for another 3-4 minutes until softened.
  3. Sprinkle taco seasoning over the mixture and add water as per package instructions. Stir well to combine.
  4. Stir in rinsed black beans and uncooked rice; pour in enough water based on rice package directions.
  5. Bring to a boil, then cover and reduce heat to simmer for about 15-20 minutes or until rice is tender.
  6. Sprinkle shredded cheddar cheese on top, cover for one more minute to melt the cheese.
  7. Serve warm with sour cream on top if desired.
