Ingredients
  

  • 4 medium Russet potatoes
  • 4 tablespoons Butter
  • 1/2 cup Milk or cream
  • 2 cups Savoy cabbage
  • 4 stalks Scallions (green onions)
  • Salt to taste
  • Pepper to taste
  • a pinch Nutmeg

Method
 

  1. Peel and quarter the Russet potatoes. Boil them in a pot of salted water until tender, about 20 minutes.
  2. Drain the potatoes and return them to the pot. Add butter, milk or cream, salt, pepper, and nutmeg. Mash until smooth.
  3. In a separate pan, sauté the chopped scallions and Savoy cabbage until tender.
  4. Fold the sautéed greens into the mashed potatoes and serve hot.
