  • 2 cups finely grated carrots
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • 2 large eggs
  • ½ cup vegetable oil
  • 1 cup cream cheese frosting
  • 1 cup white chocolate melts
  • Optional: Sprinkles or chopped nuts for decoration

Method
 

  1. Preheat the oven to 350°F (175°C) and prepare baking tools.
  2. In a large bowl, whisk together flour, sugar, baking powder, cinnamon, nutmeg, and a pinch of salt.
  3. In another bowl, beat eggs and oil until smooth; add grated carrots and mix well.
  4. Combine wet and dry ingredients gently until just mixed; lumps are fine.
  5. Pour the batter into a greased baking dish and bake for 25-30 minutes until a toothpick comes out clean. Let cool completely on a wire rack.
  6. Crumble cooled cake into fine pieces in a large bowl. Mix in enough cream cheese frosting until the mixture holds together when rolled.
  7. Roll mixture into bite-sized balls and chill for about an hour.
  8. Melt white chocolate according to package instructions and dip each ball until fully coated. Decorate with sprinkles before the coating sets.
