Ingredients
  

  • 1 whole chicken (3-4 pounds)
  • 1/4 cup fresh lemon juice
  • 6 cloves garlic minced
  • 1 bunch fresh cilantro
  • 1/4 cup extra virgin olive oil
  • 1 piece jalapeño pepper seeds removed
  • Salt to taste
  • Pepper to taste

Method
 

  1. Preheat your oven to 425°F (220°C) and prepare a roasting pan with nonstick spray.
  2. In a blender, combine garlic, lemon juice, cilantro leaves, jalapeño, olive oil, salt, and pepper. Blend until smooth.
  3. Marinate the chicken by rubbing half the sauce all over it in a bowl or resealable bag. Let it marinate for at least one hour.
  4. Place the marinated chicken in the roasting pan and pour any remaining marinade over it. Roast for about 60 minutes or until the internal temperature reaches 165°F (75°C).
  5. Allow the chicken to rest for ten minutes before carving and serve with additional spicy cilantro sauce drizzled on top.
