  • 1 lb Flank Steak or Skirt Steak
  • 3 tbsp Olive Oil
  • 2 tbsp Lime Juice freshly squeezed
  • 2 cloves Garlic minced
  • 1 tbsp Chili Powder
  • 1 tbsp Cumin
  • 1 tsp Paprika
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
Fillings
  • 1 large Bell Pepper sliced, any color
  • 1 large Onion sliced
  • 8 small Flour Tortillas for serving
  • 1 cup Sour Cream for serving
  • 1 cup Guacamole for serving
  • 1 cup Pico de Gallo for serving

Method
 

Preparation
  1. Marinate the flank steak with olive oil, lime juice, garlic, chili powder, cumin, paprika, salt, and black pepper for at least 20 minutes.
  2. Preheat the grill to medium-high heat.
Cooking
  1. Grill the marinated steak for about 5-7 minutes on each side, or until desired doneness is reached.
  2. Remove the steak from the grill and let it rest for a few minutes before slicing it thinly against the grain.
  3. In a skillet, sauté the bell pepper and onion over medium heat until softened.
  4. Serve the sliced steak in flour tortillas with sautéed peppers and onions, and top with sour cream, guacamole, and pico de gallo.
