  • 1/2 cup unsalted butter
  • 1 cup all-purpose flour
  • 4 large eggs (room temperature)
  • 1 cup shredded Gruyère cheese
  • 1/2 tsp salt

Method
 

  1. Preheat oven to 425°F (220°C) and line two baking sheets with parchment paper.
  2. In a medium saucepan, combine water, butter, and salt over medium heat until boiling.
  3. Remove from heat and quickly stir in flour until a smooth ball forms.
  4. Allow the mixture to cool slightly before adding eggs one at a time, mixing well after each addition.
  5. Fold in the shredded cheese until evenly mixed.
  6. Pipe tablespoon-sized mounds onto prepared baking sheets about two inches apart.
  7. Bake for 20-25 minutes or until golden brown.
