- Preheat your oven to 375°F (190°C).
- In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat, then add diced onions and cumin. Cook until onions are soft.
- Take a tortilla, fill it with some beef mixture, top with cheese and salsa, then roll tightly.
- Spread some enchilada sauce on the bottom of a baking dish. Place rolled enchiladas seam-side down, cover with remaining sauce and sprinkle with cheese.
- Cover with foil and bake for 20 minutes. Remove foil and bake an additional 10 minutes until bubbly and golden.
- Let cool slightly before serving. Top with sour cream or cilantro if desired.
