Ingredients
  

  • 1 lb lean ground beef
  • 8 pieces corn or flour tortillas
  • 2 cups shredded cheddar and Monterey Jack cheese
  • 1 cup salsa store-bought or homemade
  • 1 medium onion diced
  • 1 tsp ground cumin
  • 2 cups enchilada sauce store-bought or homemade

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat, then add diced onions and cumin. Cook until onions are soft.
  3. Take a tortilla, fill it with some beef mixture, top with cheese and salsa, then roll tightly.
  4. Spread some enchilada sauce on the bottom of a baking dish. Place rolled enchiladas seam-side down, cover with remaining sauce and sprinkle with cheese.
  5. Cover with foil and bake for 20 minutes. Remove foil and bake an additional 10 minutes until bubbly and golden.
  6. Let cool slightly before serving. Top with sour cream or cilantro if desired.
