Ingredients
  

  • 1 lb Pasta of choice (like penne or spaghetti)
  • 1 tbsp Salt (for pasta water)
  • 1 cup Bell peppers (mix of red, yellow, and green)
  • 1 medium Zucchini (sliced thinly)
  • 1 cup Carrots (julienne or sliced thin)
  • 1 cup Cherry tomatoes (roasted)
  • 2 cups Spinach or kale (added at the end)
  • 3 tbsp Olive oil (extra virgin for best flavor)
  • 2 cloves Garlic (minced)
  • 1/2 cup Parmesan cheese (freshly grated)

Method
 

  1. Boil water in a large pot and add salt to it. Cook the pasta according to package instructions until al dente.
  2. While the pasta is cooking, heat olive oil in a large skillet over medium heat.
  3. Add the minced garlic and sauté until fragrant, about 1 minute.
  4. Add bell peppers, zucchini, and carrots to the skillet. Sauté for about 5-7 minutes until the vegetables are tender.
  5. Stir in the roasted cherry tomatoes and spinach or kale. Cook for another 2-3 minutes until the greens are wilted.
  6. Drain the cooked pasta and add it to the skillet. Toss everything together until well combined.
  7. Remove from heat and sprinkle with freshly grated Parmesan cheese before serving.
