  • 1 lb asparagus trimmed
  • 1 cup cherry tomatoes

  • 2 tbsp fresh lemon juice
  • 4 cloves garlic minced
  • 4 tbsp unsalted butter melted
  • 1 tsp dried oregano
  • Salt to taste
  • Pepper to taste

Cooking Steps
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Rinse asparagus and cherry tomatoes; arrange on one side of the baking sheet.
  3. In a saucepan over medium heat, melt butter, then add minced garlic and oregano for about one minute until fragrant.
  4. Place salmon fillets on the other side of the baking sheet. Drizzle half of the garlic butter over them and season with lemon juice, salt, and pepper.
  5. Roast everything in the preheated oven for 15-20 minutes until the salmon flakes easily with a fork and vegetables are tender yet crisp.
  6. Drizzle remaining garlic butter over the cooked dish before serving.
