Ingredients
  

  • 2 lbs beef chuck roast
  • 3 medium carrots sliced
  • 2 cups Yukon Gold potatoes diced
  • 1 large sweet onion diced
  • 4 cloves garlic minced
  • 4 cups low-sodium beef broth
  • 2 tsp fresh thyme
  • 2 bay leaves

Method
 

  1. Prepare your ingredients by chopping the vegetables and mincing the garlic.
  2. In a large pot over medium-high heat, sear the beef chuck roast until browned on all sides.
  3. Add diced onions and minced garlic to the pot; sauté until fragrant.
  4. Stir in carrots, potatoes, thyme, bay leaves, and beef broth. Bring to a boil then reduce to a simmer.
  5. Cover and let simmer for about 2 hours until meat is tender.
  6. Remove bay leaves before serving hot with crusty bread or mashed potatoes.
