Ingredients
  

  • 2 fillets fresh salmon 6 oz each
  • 4 cups mixed greens spinach, arugula, romaine
  • 1 medium cucumber sliced
  • 1 cup cherry tomatoes halved
  • 1/4 medium red onion thinly sliced
  • 2 tbsp freshly squeezed lemon juice
  • 3 tbsp extra virgin olive oil
  • 2 tbsp fresh dill or parsley chopped

Method
 

  1. Preheat the oven to 375°F (190°C). Place salmon fillets on a parchment-lined baking sheet. Drizzle with olive oil and season with salt and pepper. Bake for 15-20 minutes until flaky.
  2. Chop mixed greens into bite-sized pieces. Slice cucumber and halve cherry tomatoes.
  3. In a small bowl, whisk together olive oil, lemon juice, salt, pepper, and herbs.
  4. Once the salmon cools slightly, flake it into chunks. In a large bowl, toss together the greens, veggies, and salmon.
  5. Drizzle dressing over the salad and toss lightly until well combined. Serve immediately.
