Ingredients
  

For the Salad
  • 2 pieces chicken breasts boneless, skinless
  • 6 cups mixed greens such as spinach, arugula, and romaine
  • 1 cup cherry tomatoes halved
  • 1 cucumber sliced
  • 1/2 cup red onion thinly sliced
  • 1/4 cup feta cheese crumbled
  • 1/4 cup olive oil for dressing
  • 2 tablespoons balsamic vinegar for dressing
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste

Method
 

Grilling the Chicken
  1. Preheat the grill to medium-high heat.
  2. Season the chicken breasts with salt and pepper.
  3. Grill the chicken for 6-7 minutes on each side or until fully cooked.
  4. Remove from the grill and let it rest for 5 minutes before slicing.
Assembling the Salad
  1. In a large mixing bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, and feta cheese.
  2. In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
  3. Drizzle the dressing over the salad and toss to combine.
  4. Slice the grilled chicken and place it on top of the salad.
  5. Serve immediately.
