Ingredients
  

  • 1 lb lean ground turkey
  • 2 cups mixed bell peppers chopped (red, yellow, green)
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 2 tbsp extra virgin olive oil
  • 1 tsp cumin
  • 1 tsp paprika
  • salt to taste
  • pepper to taste

Method
 

  1. Chop bell peppers and onion into bite-sized pieces and mince garlic.
  2. In a large skillet over medium heat, heat olive oil. Add onion and garlic; sauté until fragrant (about 2 minutes).
  3. Add ground turkey to the skillet. Break apart with a spatula and cook until browned (approximately 5-7 minutes).
  4. Stir in chopped bell peppers along with cumin, paprika, salt, and pepper. Cook for another 5 minutes until peppers are tender yet crunchy.
  5. Sample the mixture; adjust seasonings as needed.
  6. Transfer to plates or bowls and garnish with fresh herbs if desired.
