  • 1 tablespoon honey
  • 1 teaspoon garlic powder
  • 1 teaspoon ground ginger
  • 1 tablespoon olive oil
Jalapeño Pineapple Salsa
  • 1 cup fresh pineapple, diced
  • 1 medium jalapeño, seeded and minced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 1 lime juiced
  • 1/4 teaspoon salt

Method
 

Marinating and Cooking Chicken
  1. In a bowl, combine chicken thighs, soy sauce, honey, garlic powder, ground ginger, and olive oil. Marinate for at least 15 minutes.
  2. Heat a skillet over medium-high heat and cook the marinated chicken thighs for about 5-7 minutes per side or until fully cooked. Remove from heat and let rest before slicing.
Preparing Salsa
  1. In a separate bowl, mix diced pineapple, minced jalapeño, chopped red onion, chopped cilantro, lime juice, and salt to prepare the salsa.
Assembling Tacos
  1. Warm the corn tortillas in a dry skillet for about 30 seconds on each side.
  2. Assemble the tacos by placing sliced chicken, shredded lettuce, salsa, and sliced avocado in each tortilla.
