Ingredients
  

Chicken and Sauce
  • 3 breasts boneless, skinless chicken about 1.5 lbs
  • 3 cloves fresh garlic minced
  • 1/2 cup creamy peanut butter
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp brown sugar
  • 2 tbsp freshly squeezed lime juice
Vegetables and Garnish
  • 1 each red bell pepper sliced
  • 1 each yellow bell pepper sliced
  • 1 each cucumber thinly sliced
  • 2 cups cooked rice or quinoa
  • Fresh cilantro for garnish

Method
 

Preparation
  1. Cut the chicken into bite-sized pieces and mince the garlic.
  2. In a skillet over medium heat, add oil and cook the chicken until golden brown, about 5-7 minutes.
  3. In a bowl, whisk together peanut butter, soy sauce, brown sugar, garlic, and lime juice until smooth.
  4. Pour the peanut sauce over the cooked chicken and stir to coat thoroughly.
  5. Serve rice or quinoa in bowls topped with the peanut chicken mixture and arrange bell peppers and cucumber around it.
  6. Finish with fresh cilantro and an extra squeeze of lime.
