  • 1 cup whole milk
  • 1 cup shredded sharp cheddar cheese
  • 2 cups cooked bacon or sausage, chopped
  • 2 cups fresh baby spinach
  • 1 medium onion, diced
  • Salt to taste
  • Pepper to taste
  • Nonstick cooking spray for baking dish

Method
 

  1. Preheat your oven to 350°F (175°C) and lightly spray a 9×13-inch baking dish with nonstick cooking spray.
  2. In a skillet over medium heat, cook the bacon or sausage until crispy. Drain excess fat on paper towels and chop into bite-sized pieces.
  3. In the same skillet, sauté the diced onion until translucent, then add the spinach and cook until wilted (about 2 minutes).
  4. In a large bowl, whisk together the eggs and milk until combined. Season with salt and pepper.
  5. Stir in the cooked meat, sautéed vegetables, and half of the shredded cheese into the egg mixture. Pour into the prepared baking dish.
  6. Sprinkle remaining cheese on top and bake for 30-35 minutes or until set in the center and golden brown on top.
