Ingredients
  

  • 2 fillets skinless fresh salmon 6 oz each
  • 2 tbsp sriracha sauce
  • 2 tbsp raw honey
  • 1 tbsp low-sodium soy sauce
  • 1 cup cooked white or brown rice
  • 1 cup mixed fresh vegetables
  • 1 tsp sesame seeds

Method
 

  1. Cook the rice according to package instructions.
  2. In a bowl, whisk together sriracha, honey, soy sauce, and a splash of water.
  3. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. Brush salmon with the sauce mixture and bake for 12-15 minutes until cooked through.
  4. Prepare your vegetables by chopping them into bite-sized pieces.
  5. Assemble the bowls: place rice at the bottom, top with salmon, and arrange veggies on top.
  6. Drizzle with reserved sauce and sprinkle sesame seeds before serving.
