A refreshing Mexican beverage made from rice, milk, vanilla, and cinnamon, perfect for hot days.

Ingredients
  

Rice Mixture
  • 1 cup long-grain white rice rinsed
  • 4 cups water
Sweetening and Flavoring
  • 1 cup milk can use almond milk for a dairy-free version
  • 1/2 cup granulated sugar adjust to taste
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Method
 

Prepare the Rice
  1. Soak the rinsed rice and cinnamon stick in water for at least 3 hours or overnight.
Blend and Strain
  1. Drain the rice and cinnamon stick, then blend with 4 cups of fresh water until smooth.
  2. Strain the mixture through a fine mesh strainer or cheesecloth into a large bowl or pitcher.
Add Flavorings
  1. Stir in the milk, sugar, vanilla extract, and salt until well combined.
Serve
  1. Chill in the refrigerator for at least 30 minutes before serving. Serve over ice.

Notes
