Ingredients
  

Pasta
  • 8 oz rotini pasta or any short pasta
Vegetables
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 cup bell pepper diced
  • 1/2 cup red onion finely chopped
Meats and Cheeses
  • 4 oz salami sliced and quartered
  • 4 oz mozzarella cheese diced
Dressing
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp Italian seasoning
  • 1 clove garlic minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method
 

Prepare the Pasta
  1. Cook the rotini pasta according to package instructions. Drain and rinse under cold water to cool.
Mix the Salad
  1. In a large mixing bowl, combine the cooked pasta, cherry tomatoes, cucumber, bell pepper, red onion, salami, and mozzarella cheese.
Make the Dressing
  1. In a separate bowl, whisk together olive oil, red wine vinegar, Italian seasoning, minced garlic, salt, and black pepper until well combined.
Combine and Serve
  1. Pour the dressing over the pasta salad and toss gently to combine. Serve immediately or refrigerate for 30 minutes to allow flavors to meld.
