Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup salsa preferably medium or hot
  • 1 cup cheddar cheese, shredded for topping
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 cup tortilla chips, crushed for layering

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine shredded chicken, black beans, corn, salsa, cumin, and chili powder.
  3. In a casserole dish, layer half of the crushed tortilla chips, followed by the chicken mixture, and then top with half of the cheese.
  4. Repeat the layers with the remaining tortilla chips, chicken mixture, and cheese.
  5. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
Serving
  1. Remove from the oven and let it cool for a few minutes before serving.
  2. Serve warm, garnished with fresh cilantro if desired.
