Ingredients
  

Chocolate Mousse Cups
  • 1 cup heavy cream for whipping
  • 4 oz dark chocolate melted
  • 2 large egg whites room temperature
  • 2 tbsp sugar
Mini Fruit Tarts
  • 1 package pre-made tart shells
  • 1 cup pastry cream store-bought or homemade
  • 1 cup mixed fresh fruit such as berries, kiwi, and mango
  • 2 tbsp apricot jam for glaze
Mini Cheesecakes
  • 8 oz cream cheese softened
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 1 large egg beaten
  • 1 cup graham cracker crumbs for crust
  • 1/4 cup butter melted

Method
 

Chocolate Mousse Cups
  1. Whip the heavy cream until soft peaks form. In another bowl, mix melted chocolate with egg yolks. Fold in the whipped cream gently.
  2. Beat egg whites with sugar until stiff peaks form. Fold into the chocolate mixture.
  3. Spoon the mousse into small cups and refrigerate for at least 2 hours before serving.
Mini Fruit Tarts
  1. Fill each tart shell with pastry cream.
  2. Top with mixed fresh fruit.
  3. Heat apricot jam until melted and brush over the fruit for a shiny finish.
Mini Cheesecakes
  1. Preheat the oven to 325°F (160°C).
  2. Mix graham cracker crumbs with melted butter and press into the bottom of muffin tins.
  3. Blend cream cheese, sugar, vanilla, and egg until smooth. Pour over the crusts.
  4. Bake for 15 minutes, then cool and refrigerate for at least 2 hours before serving.
