Ingredients
  

  • 4 pieces salmon fillets 6 oz each
  • 3 tbsp white miso paste
  • 4 tbsp unsalted butter softened
  • 1/4 cup fresh scallions chopped
  • 2 tbsp fresh parsley chopped
  • 2 tbsp extra virgin olive oil
  • 1 tbsp lemon juice
  • salt to taste
  • pepper to taste

Method
 

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix softened butter with miso paste until smooth. Spread generously over the top of each salmon fillet.
  3. Place salmon on the baking sheet and bake for 12-15 minutes until flaky but moist.
  4. While the salmon bakes, combine scallions, parsley, olive oil, lemon juice, salt, and pepper in a bowl to make the salsa verde.
  5. Once cooked, transfer salmon to plates and top with scallion salsa verde before serving.
