One-Pan Creamy Sun-Dried Tomato Salmon

Ingredients
  

  • 2 salmon fillets skin-on or off
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp butter
  • 3 cloves garlic minced
  • 1/3 cup sun-dried tomatoes drained of oil, chopped
  • 1 cup heavy cream
  • 2 cups fresh baby spinach
  • 1/4 cup parmesan cheese grated

Method
 

  1. Season the salmon fillets with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Sear the salmon for 4-5 minutes per side until golden and cooked through. Remove to a plate.
  2. In the same skillet, reduce heat to medium. Add butter, minced garlic, and chopped sun-dried tomatoes. Sauté for 1-2 minutes until fragrant.
  3. Pour in the heavy cream and bring to a gentle simmer. Let it cook for 2 minutes to slightly thicken.
  4. Stir in the fresh baby spinach and grated parmesan cheese. Simmer until the spinach is wilted and the sauce is smooth and creamy.
  5. Return the salmon to the skillet, spooning the creamy sauce over the top to warm through. Serve immediately over pasta or with crusty bread.
