Ingredients
  

  • 1 lb lean ground beef
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 28 oz crushed tomatoes (canned)
  • 4 cups low-sodium chicken broth
  • 8 oz lasagna noodles, broken into pieces
  • 2 tsp Italian seasoning
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese

Method
 

  1. In a large pot over medium heat, drizzle olive oil and sauté chopped onions until softened. Add ground beef and cook until browned.
  2. Stir in minced garlic and Italian seasoning; cook for an additional minute until fragrant.
  3. Pour in crushed tomatoes and chicken broth; stir and bring to a boil.
  4. Add broken lasagna noodles, reduce heat to low, and simmer uncovered until noodles are tender (about 10 minutes).
  5. Stir in ricotta cheese until fully combined and creamy.
  6. Serve hot, topped with shredded mozzarella cheese that melts beautifully.
