  • 1 whole chicken (4-5 lbs)
  • 1/4 cup extra-virgin olive oil
  • 6 cloves garlic, minced
  • 1 cup fresh cilantro leaves
  • 2 whole jalapeño peppers (seeds removed) for milder heat
  • Juice of 2 limes
  • Salt to taste
  • Pepper to taste

Method
 

  1. Preheat the oven to 425°F (220°C). Rinse the chicken under cold water and pat dry. Season generously with salt and pepper.
  2. In a bowl, mix olive oil, minced garlic, and paprika. Rub the mixture all over the chicken.
  3. Place the chicken breast-side up in a roasting pan and roast for about 1 hour and 15 minutes, or until golden brown and juices run clear.
  4. While the chicken roasts, blend cilantro, jalapeños, lime juice, salt, and olive oil until smooth to create the spicy sauce.
  5. Check the internal temperature of the chicken; it should reach at least 165°F (75°C). Let it rest for 10 minutes before carving.
