Ingredients
  

Chicken Marinade
  • 4 pieces chicken thighs bone-in, skin-on
  • 2 cloves garlic minced
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 lime juice
  • 2 tablespoons vegetable oil for marinade
Fried Plantains
  • 2 large green plantains peeled and sliced
  • 1 cup vegetable oil for frying
  • 1 teaspoon salt
Salad
  • 1 cup cabbage shredded
  • 1 tomato diced
  • 1 cucumber sliced
  • 2 tablespoons lime juice
  • 1 teaspoon salt

Method
 

Marinate the Chicken
  1. In a mixing bowl, combine garlic, cumin, oregano, salt, black pepper, lime juice, and vegetable oil. Add chicken and coat well. Marinate for at least 30 minutes.
Fry the Chicken
  1. Heat a frying pan over medium heat and add vegetable oil. Once hot, add marinated chicken pieces and cook for about 25-30 minutes, turning occasionally, until golden brown and cooked through.
Prepare the Plantains
  1. In another frying pan, heat vegetable oil over medium heat. Fry plantain slices until golden and crispy, about 3-4 minutes on each side. Remove and sprinkle with salt.
Make the Salad
  1. In a bowl, combine shredded cabbage, diced tomato, sliced cucumber, lime juice, and salt. Toss to mix well.
Serve
  1. Plate the fried chicken with crispy plantains on the side and a serving of salad. Enjoy your Pollo con Tajadas!
