Ingredients
  

  • 1 lb fresh salmon fillets
  • 1 can (13.5 oz) full-fat coconut milk
  • 2 tbsp red curry paste
  • 1 inch fresh ginger, grated
  • 4 garlic cloves, minced
  • 2 lemongrass stalks, chopped
  • 1 cup bell peppers, sliced (red or yellow)
  • 2 cups spinach or kale

Method
 

  1. Prepare your ingredients by chopping the vegetables and mincing the garlic and ginger.
  2. In a large pot over medium heat, add oil and sauté garlic and ginger until fragrant.
  3. Stir in red curry paste and lemongrass; cook for another minute.
  4. Gradually pour in coconut milk while stirring; bring to a gentle simmer.
  5. Add bell peppers and cook for about five minutes until softened.
  6. Gently place salmon fillets into the sauce; cover and poach for 6-8 minutes until cooked through.
