  • 1 lb lean ground turkey
  • 2 cups Yukon Gold or red potatoes, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • 1 tsp dried thyme or rosemary

Method
 

  1. Wash and chop potatoes into bite-sized pieces; dice the onion and mince the garlic.
  2. Heat olive oil in a large skillet over medium heat. Add onion and garlic; sauté until fragrant (3-5 minutes).
  3. Add ground turkey to the skillet; break apart as it cooks (6-8 minutes). Season with salt, pepper, and paprika.
  4. Stir in chopped potatoes until coated with flavors.
  5. Cover skillet and reduce heat to low. Cook for 15-20 minutes until potatoes are tender, stirring occasionally.
