Ingredients
  

Shortcake
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter cold and cubed
  • 1 cup heavy cream plus extra for whipping
  • 1 teaspoon vanilla extract
Topping
  • 2 cups fresh strawberries sliced
  • 2 tablespoons granulated sugar for macerating strawberries

Method
 

Prepare the Strawberries
  1. In a bowl, combine sliced strawberries with sugar and let them sit for about 15 minutes to release their juices.
Make the Shortcake
  1. Preheat the oven to 425°F (220°C).
  2. In a mixing bowl, whisk together flour, baking powder, salt, and sugar.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Stir in the heavy cream and vanilla extract until just combined.
  5. Turn the dough onto a floured surface and knead gently. Pat into a 1-inch thick round.
  6. Cut into rounds and place on a baking sheet.
  7. Bake for 12-15 minutes or until golden brown.
Assemble the Shortcakes
  1. Once the shortcakes are cool, slice them in half horizontally.
  2. Layer the bottom half with macerated strawberries and whipped cream, then top with the other half.
  3. Serve immediately and enjoy!
