Ingredients
  

Shrimp Filling
  • 1 pound shrimp peeled and deveined
  • 1 cup celery finely chopped
  • 1 cup green onions sliced
  • 1/2 cup mayonnaise or Greek yogurt
  • 1 tablespoon lemon juice freshly squeezed
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste
Rolls
  • 4 large sub rolls or hoagie rolls
  • 1 cup lettuce shredded
  • 1 medium tomato sliced

Method
 

Prepare Shrimp
  1. Bring a large pot of salted water to a boil. Add the shrimp and cook for 2-3 minutes until they turn pink and opaque. Drain and cool.
Make Filling
  1. In a mixing bowl, combine the cooked shrimp, celery, green onions, mayonnaise, lemon juice, Dijon mustard, salt, and pepper. Mix well.
Assemble Rolls
  1. Slice the sub rolls in half lengthwise. Layer with shredded lettuce, tomato slices, and the shrimp filling. Close the rolls and serve immediately.
