  • 4 pieces boneless, skinless chicken breasts approximately 1 lb
  • 2 cloves fresh garlic minced
  • 1 medium onion chopped
  • 2 medium carrots diced
  • 1 cup frozen peas
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 tsp dried thyme
  • 1 package puff pastry sheets 17.3 oz

Method
 

  1. Cut chicken into bite-sized pieces; season with salt and pepper.
  2. In a large skillet over medium heat, add olive oil and sauté onions and garlic until fragrant (about 3 minutes).
  3. Add seasoned chicken to the skillet; cook until golden brown and no longer pink (6–8 minutes).
  4. Stir in chicken broth, heavy cream, thyme, carrots, and peas; let simmer until bubbly (5 minutes).
  5. Roll out puff pastry over the filling in the skillet; poke holes for steam to escape.
  6. Bake at 400°F (200°C) for about 20 minutes or until golden brown.
